The flavors of cinnamon, nutmeg and pumpkin in the morning are so comforting but, there’s not always time to prepare a big breakfast. Pumpkin Overnight Oatmeal is a great breakfast on the go! Just combine the ingredients at night, let the flavors meld together in the fridge overnight and it’s ready to enjoy in the morning. Enjoy!
You can eat it cold but I actually prefer to pull it out of the fridge first thing in the morning and let it warm up to room temp while I’m getting ready. If you like yours piping hot, feel free to pop it in the microwave for a little bit. However, keep in mind that if you use mason jars (I use these) then the jar may be hot.
- ⅓ Cup of Rolled Oats
- ⅓ Cup of Greek Yogurt
- ⅓ Cup Milk
- 3-4 Tbs. Canned Pumpkin
- 1 tsp. Cinnamon
- Pinch of Nutmeg
- 2 Tbs. Brown Sugar
- Combine all ingredients and store overnight in refrigerator, letting the flavors meld.
- Pull out in the morning for a quick and healthy breakfast on the go.
