Hot Cocoa Cookies

These chocolate hot cocoa cookies with their gooey marshmallow icing taste just like a cup of warm hot cocoa. They are chewy, chocolatey and oh-so-yummy. I also love that they are a winter cookie that isn’t overly Christmas-y. Of course, they would be perfect to leave out with a glass of milk for Mr. Claus but you can also whip up a batch of hot cocoa cookies in January and February for a sweet winter treat.

Hot Cocoa Cookies

These hot cocoa cookies are thumbprint style cookies. This works so well to help the marshmallow icing stay perfectly in place. If you think they need even more chocolate, use your vegetable peeler like I did to add a few chocolate shavings to the top of each cookie. If we are eating them at home I usually don’t bother but if I’m taking them to a party or cookie exchange I always add the shavings. I feel like it gives them a little something extra.

Ingredients
Cookies:
  • ½ cup softened Butter
  • ⅔ cup Sugar
  • 1 Egg
  • 2 tbsp Milk
  • 1 tsp Vanilla
  • 1 cup Flour
  • ⅓ cup Cocoa Powder
Icing:
  • ½ cup softened Butter
  • 1 cup Powdered Sugar
  • 3½ oz Marshmallow Creme
  • ¼ tsp Vanilla
Instructions
  1. Whisk together the flour and cocoa and set aside.
  2. Cream together butter and sugar in a large bowl.
  3. Beat in the egg milk and vanilla.
  4. Gradually add flour mixture to butter mixture and mix well.
  5. Cover and refrigerate for at least an hour.
  6. Preheat oven to 350.
  7. Line baking sheet with parchment paper or silicone mat.
  8. Form into 1" balls and place about 2" apart on prepared sheet.
  9. Using your thumb, make an indentation in each ball.
  10. Bake for 10-12 minutes or until center is set.
  11. Allow cookies to cool.
  12. Cream butter and vanilla with a mixer until fluffy.
  13. Gradually add in powdered sugar until incorporated.
  14. Fold in marshmallow creme.
  15. Transfer to piping bag with a round tip.
  16. Frost each cookie.

These hot cocoa cookies go perfectly with a glass of milk or even a steaming cup of real hot cocoa. I also love to make them when we go look at Christmas lights. I don’t trust the kids in the car with real hot chocolate.  These hot cocoa cookies are the next best thing!
