Healthy vegetable soup isn’t just for cold days or winter months! It can actually be better in the summer thanks to plentiful, fresh ingredients.
One of my favorite things to do during the summer months is to go to our local farmers’ market. Even if I have a specific list with me, I can still spend a lot of time just checking out everything there is to offer as well as just taking in the sights and smells of everything too.
In fact, this is probably one of the reasons I love making this healthy vegetable soup in the summer. There are just so many fresh ingredients to use. Warm-season vegetables, such as peppers and tomatoes are perfect for soup. Plus, being able to make killer vegetable soup is a great skill for any home chef. There is something about a delicious, homemade healthy vegetable soup that just makes you feel as if all is right in the world.
Visit your local farmers’ market or grocery store to pick up the fresh ingredients and then it is time to get cooking! What is particularly nice about this recipe is that it is easy to adjust the vegetables, quantities, and even ingredients.
For example, if you’d like the recipe to be vegan or vegetarian, try using vegetable stock. On the other hand, if you’d like to make it more filling, how about adding in some chopped chicken breast! Another idea would be to use beans instead of tomatoes. Get creative! The onions and the celery are where much of the recipe’s flavor comes from, so it is best not to substitute those, but every other vegetable is pretty much fair game!
Another great thing about this healthy vegetable soup recipe is that it is easy enough for anyone to make, whether they are a beginner or an expert home chef!
- 2 celery stalks, chopped
- 1 can stewed tomatoes, 28 oz
- 1 can corn
- 2 parsnips, peeled, diced
- 2 carrots, peeled, diced
- ½ onion, diced
- 1 tsp garlic, minced
- salt and pepper (to taste)
- 4 c chicken/veggie stock
- 2 tbsp dill, dried
- First combine all ingredients in the slow cooker bowl.
- Then add additional seasonings to taste.
- Cook on low for 6 – 7 hours or high for 4 – 5 hours.
- The soup is ready when the root vegetables are tender.
Whether you are making this soup to ward off a winter cold or using some of your farmers’ market finds, this healthy vegetable soup isn’t just easy to make but it is also delicious.
