I call this Guacamole Queso Panini a Saturday sandwich. My husband always wants a big lunch on Saturday. He’s usually working in the yard or playing with the kids and a boring turkey sandwich just doesn’t cut it. He wants something a little more. Enter this bad boy. I should also say that my husband considerers queso a food group. He needs melted cheese in his life. So you can imagine that this sandwich is right up his alley!
So with this Guacamole Queso Panini you can use any kind of cheese you want. We usually have cheddar on hand so that’s what I typically use but you could swap it. For a more traditional Mexican blend so a slice of Cheddar and a slide of Colby Jack. And if you have leftover queso from a party (or if you really want to get decadent) just slather some queso on it. From there it’s a really simple sandwich.
- 1 Ciabatta roll or ⅓ Baguette
- ¼ Cup guacamole or mashed avocado
- 2 Slices cheddar cheese
- Jalapeños to taste
- Slice open your ciabatta roll.
- Slather the guacamole on the bottom half, top with the cheese and the jalapeños.
- Close the sandwich with the other half of the roll and place into a panini press
- Cook for 5 minutes or until crunchy and melty.
If you need to make the sandwiches a little more filling, you can add some chicken, fajita seasoned would be best. You can also just add some sliced turkey for a simple solution. Personally I prefer it with just the guac and cheese. You’ll also notice in the recipe the jalapeños are optional but my husband thinks they really make the sandwich. They give it that kick that puts it over the top.
