This recipe for Grandma’s Chicken & Dumplings is perfect for this time of year. Chicken and Dumplings are comfort food at it’s finest. We’re putting all of the decorations away from Christmas and warming up with a bowl of this yummy soup. If you want a little kick, my husband adds a bit of Chile Verde sauce to his Chicken & Dumplings and loves it! Enjoy!

Ingredients
  • For the Soup:
  • 1 lb Chicken, Boneless
  • 2 Cups Celery, Chopped
  • 2 Cups Carrots, Chopped
  • 3 Tbsp. Sage
  • 3 Tbsp. Thyme
  • 2 cloves garlic, chopped
  • Salt and Pepper to taste
  • Water
  • For the Dumplings:
  • 2 Cups Flour, Self-Rising
  • 1 Cup Chicken Stock
  • *If self-rising flour is unavailable, add 1 ½ tsp baking powder and ¼ salt per 1 cup of all purpose flour.
Instructions
  1. In a large pot add chicken, vegetables and seasonings and add enough water to cover everything.
  2. Bring everything to a boil, and then reduce heat to low and simmer for 1 hour.
  3. After 1 hour, remove 1 cup of the stock and set aside to cool.
  4. Once stock has cooled, add the 1-cup of stock to the flour and knead into a dough.
  5. Turn dough out onto a well-floured surface and roll out to 1inch thick.
  6. Cut dough into 1-inch strips, and then pinch off each strip into ½ inch long dumplings.
  7. Bring chicken and vegetables back to a boil, once it is at a rolling boil, drop in your dumplings.
  8. Reduce heat to medium high and cook for an additional 10 minutes.

    I made this recipe exactly as described. It has a lot of spice! I probably in the future would reduce the amount to 2 tbsp of spice apiece for the sage and thyme; and I would recommend adding in a few tsp of salt. possibly sugar as well. Other than that though, it did have a home cooked grandma type flavor as promised and meets the criteria for comfort food!
