Sheet Pan Barbecue Chicken

Ingredients
Sheet Pan Dinner
  • 3-4 Chicken Breasts
  • 1 Zucchini (sliced & quartered)
  • 8-10 Small Red Potatoes (quartered)
  • ½ Red Onion (cut into thick pieces)
  • 2 Ears of Corn (Halved)
  • ½ Cup BBQ Sauce
  • Olive Oil
  • Salt
  • Pepper
  • 1 Tbs Parsley (optional)
  • 1 Tbs Green Onion (optional)
BBQ Seasoning
  • 1 tsp Smoked Paprika
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Brown Sugar
  • ½ tsp Coriander
  • ½ tsp Salt
Instructions
  1. Preheat oven to 400
  2. Line a baking sheet with parchment paper
  3. Season the chicken breast with salt, pepper and BBQ seasoning.
  4. Add potatoes, zucchini and red onion to a bowl. Drizzle with olive oil. Toss to coat.
  5. Add BBQ seasoning to vegetables and toss to coat.
  6. Season corn with BBQ seasoning and add a pat of butter on top. Wrap in foil.
  7. Place chicken on baking sheet and baste thoroughly with BBQ sauce.
  8. Add vegetables and corn to baking sheet.
  9. Bake for 20-30 minutes depending on chicken breast size.
  10. Remove from oven. Set oven to Broil.
  11. Baste chicken again with BBQ sauce.
  12. Remove corn from baking sheet and return to oven.
  13. Broil for 3-5 minutes until potatoes brown and crisp.
  14. Remove from oven.
  15. Garnish with parsley and/or green onion and serve
