Beef Enchilada Dip
- 2 Cups sour cream
- 2 Cup Monterrey-Jack cheese, shredded
- ½ cup enchilada sauce
- 1 Onion, diced
- 2 Garlic cloves, minced
- 2 Tomatoes, diced
- ½ Pound ground beef
- ½ Red pepper, diced
- ¼ Cup cilantro, chopped
- 1 can of diced jalapeno peppers (optional)
- Salt and pepper to taste
- Wash and chop all your produce
- Cook the ground beef on medium heat with onion, garlic and red pepper.
- Add salt & pepper to taste
- Drain fat and set aside.
- Add the enchilada sauce, sour cream, and shredded cheese to a saucepan on medium heat until the cheese is melted.
- Once melted, add almost all the beef & veggie mixture and stir until combined
- Add ½-1 can of diced jalapeños (optional)
- Pour the mixture into a bowl, and top with the diced tomatoes, cilantro, the remaining ground beef, and a little cheese.
- Serve with tortilla chips
