Beef Enchilada Dip
  • 2 Cups sour cream
  • 2 Cup Monterrey-Jack cheese, shredded
  • ½ cup enchilada sauce
  • 1 Onion, diced
  • 2 Garlic cloves, minced
  • 2 Tomatoes, diced
  • ½ Pound ground beef
  • ½ Red pepper, diced
  • ¼ Cup cilantro, chopped
  • 1 can of diced jalapeno peppers (optional)
  • Salt and pepper to taste
  1. Wash and chop all your produce
  2. Cook the ground beef on medium heat with onion, garlic and red pepper.
  3. Add salt & pepper to taste
  4. Drain fat and set aside.
  5. Add the enchilada sauce, sour cream, and shredded cheese to a saucepan on medium heat until the cheese is melted.
  6. Once melted, add almost all the beef & veggie mixture and stir until combined
  7. Add ½-1 can of diced jalapeños (optional)
  8. Pour the mixture into a bowl, and top with the diced tomatoes, cilantro, the remaining ground beef, and a little cheese.
  9. Serve with tortilla chips
