It’s Back to School time! My kids went back today and the house is eerily quiet and still, especially since we spent the past week shopping, gathering school supplies, lunch items and all the other last minute things we need.
This is an easy week for us, as it’s just school. Next week is when the crazy really begins. One boy plays Fall baseball and the other does soccer. This means in addition to easy-to-pack lunches, I’ll need some super easy weeknight dinners that we can eat quickly between practices and games.

When we have to eat dinner on-the-go between practices, I usually bake the nuggets while my kids are still at school.
