During the Fall my husband’s absolute favorite activity is to sit on the patio and watch football while the smoker is going with some good ‘ole Texas barbecue on it for dinner. I don’t think I’ve ever been to a Football party or tailgate that didn’t have barbecue. I mean, forget the hamburgers. Football calls for the real deal, right?

I told you my husband loves to use his smoker, especially during football season. You have probably heard the old adage that “the secret’s in the sauce,” but when it comes to barbecue the true secret to really good meat is the initial seasoning. Every pit master knows you need a good base rub with a some stand out ingredients to really give your meat that something special. So today I’m going to share a Coffee Chili Dry Rub to help you spice up your next tailgate!
I take my standard dry rub base and mix in some Community® coffee, add some turmeric and coriander and I swap out regular chili powder for some ancho chili powder to give it a little more spice. I think the ground coffee and ancho chili powder really pull out and compliment the smoky flavor of the meat.
Once you’ve combined all the ingredients you want to rub the Coffee Chili Dry Rub on your favorite meat. You need to give it a really generous coat. Cover all the sides and really get in the nooks and crannies. Then let the meat rest, covered in the rub, for at least 30 minutes, preferably more like an hour if you have the time. Then smoke (or even grill!) your meat like normal.
- ¼ cup ground coffee, like Community® coffee House Blend
- ¼ cup dark brown sugar, packed
- 3 tablespoons ancho chili powder
- 1 tablespoon paprika
- 1 tablespoon black pepper
- 2 tablespoons salt
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- ¼ teaspoon turmeric
- ¼ teaspoon coriander
- 1 teaspoon cayenne pepper (optional)
- Combine all the ingredients
- Apply a generous coat to the meat, covering all sides.
- Let it rest for 30min-1hr
- Cook as usual.
On this particular day I used the rub on some chicken quarters. They turned out fabulous but you can try it on brisket, ribs, pork chops or whatever your favorite cut of meat! Then top it with your favorite barbecue sauce and you’ll think you’ve died and gone to barbecue heaven!
