Mint and chocolate is one of my favorite flavor combinations. This is why I love these Chocolate Chip Mint Cookies. They are that perfect mix of minty-chocolatey goodness. Add in green food coloring and they brighten up a party spread. Or they look festive for St. Paddy’s Day or Christmas.
I like to make them with white chocolate chips but if you want something a little richer, try using semi-sweet or milk chocolate chips. They still keep their mint flavor while adding a little more decadence.
