This Chicken Bolognese recipe is the perfect family friendly dinner: simple ingredients, full of flavor, kid approved and delicious leftovers. Weeknight perfection!
Given their choice my kids generally like 4 things: pizza, spaghetti, tacos and hot dogs. They’ll eat almost anything I put in front of them but they prefer the first 4. This Chicken Bolognese recipe is a hit with them. They call it “weird spaghetti”. Weird because the noodles are different and it’s chicken instead of beef.
I love this chicken bolognese recipe because it is full of Italian flavor. It uses simple ingredients that I already have in my pantry and let’s face it. Any dinner is a hit if I don’t have to cajole my kids into eating it. Plus, it makes delicious leftovers for my husband to take to work. Winner, Winner, Chicken Dinner!
While I love the classic option below, there are many variations on this chicken bolognese recipe. One of my favorites is a simple swap. Instead of using shredded chicken you can substitute shrimp instead. I just cook them in the pan first and set them aside and add at the end instead of chicken. Simple and delicious.
Another option is if you want to live large. You can make the sauce a little thicker and decadent by adding some heavy whipping cream. Cream makes everything better and this dish is no exception! Just add 1/4 to 1/2 cup of cream when you are making the sauce. But just a little warning, once you have the cream version, you won’t want the regular version anymore!
- 1 Pound pasta
- 1 Can diced tomatoes
- 1 Clove garlic, minced
- 3 Tbsp olive oil
- ⅛ Cup water
- 2 Cups Shredded Chicken
- Salt and Pepper to taste
- Parmesan cheese to top
- Make pasta according to packaging directions. Set aside.
- While the pasta is cooking place the diced tomatoes, garlic, olive oil, water, basil and salt and pepper into a pot over medium heat. Cover with a lid and cook for 15 minutes.
- Add the chicken and stir. Pour the strained pasta and cook for 1 more minute, stirring constantly to make sure the pasta gets coated with the sauce.
- Serve and top with parmesan cheese.
