Whip up these Blackberry Floats as a delicious, fruity twist on a classic dessert. Crisp, cool and perfect for summer!

Blackberry Floats

Summer is winding down but there is still plenty of hot weather and gorgeous summer berries to be had here in Central Texas. I grabbed some Blackberries on sale the other day and decide to whip up these Blackberry Floats as a delicious, fruity twist on a classic dessert.

I like this version with whipped cream the best but you can make classic Blackberry Floats with some vanilla ice cream instead. It will give you a much thicker, creamier dessert. I think the whipped cream version tastes almost as good and if you use fat free whipped cream it’s almost a healthy treat! Or at least healthier than if you used ice cream.

Ingredients
  • 3 Cups blackberries
  • 1 Cup lime juice
  • Whipped cream to taste
  • ½ Cup water
  • ¾ Cup powdered sugar
  • 1 Cup soda water
Instructions
  1. In a blender, mix the blackberries, lime juice, and sugar until well combined.
  2. Transfer to a saucepan over medium heat, add the water and stir and let it simmer for 5 minutes.
  3. Refrigerate until cooled.
  4. Pour the mixture into glasses, add the soda water and stir
  5. Top with whipped cream.
  6. Garnish with blackberries and a mint sprig.
  7. Serve and enjoy.

Another fun twist on this Blackberry Float is to make an adult version. Spike it wth Vodka or Gin to liven up your dessert party a little bit! Another idea is to swap a different variety of berry. You can use the same recipe and swap in raspberries or strawberries. And since you are cooking them down, you can use fresh or frozen but I always think fresh is best!
